- Escort customers to their tables
- Check patron’s identification in order to ensure that they meet minimum age requirements for consumption of alcoholic beverages
- Present menus to patrons and answer questions about menu items, making recommendations upon request
- Inform customers of daily specials
- Explain how various menu items are prepared, describing ingredients and cooking methods
- Take orders from patrons for food or beverages
- Write patrons’ food orders on order slips, memorize orders, or enter orders into POS systems for transmittal to kitchen staff
- Prepare hot, cold and mixed beverages for patrons and chill bottles of wine
- Prepare tables for meals, including setting up items such as linens, silverware and glassware
- Garnish and decorate dishes in preparation for serving
- Serve food and/or beverages to patrons; prepare and serve specialty dishes at tables as required
- Check with customers to ensure that they are enjoying their meals and take action to correct any problems
- Remove dishes and glasses from tables or counters and take them to kitchen for cleaning
- Prepare checks that itemize and total meal costs and sales taxes
- Collect payment from customers
- Clean tales and/or counters after patrons have finished dining
- Perform food/drink preparation duties such as brewing coffee
- Stock service areas with supplies such as coffee, food, tableware and linens
- Complete ‘side work’ as determined by management
- Complete tasks during slow shift period. Example: Dust cabinets, polish wine bottles, read about the wines, etc.
- Describe and recommend wines to customers
- Bring wine selections to tables with appropriate glasses and pour the wines form customers. *NOTE: Proper wine handing is mandatory. Example: Proper wine presentation, cutting foil, cork/screw cap removal, pouring, host tasting and acknowledgment, pouring to complete table, etc.
- Menu education: Review and study menus daily
- Review retail wines and gain knowledge on wine maker, region, vintage, varietal, etc.
